Now these pancakes are my specialty, quick to whip up and easy to handle, on the frying pan that is!
When I go over to my mums for the weekend, my younger sisters request me to make pancakes.
My mistake every time for asking ‘What do you want to have for breakfast?’.
Its a very simple and easy recipe, I always have to double the batter amount, or some people (who get up late!) wouldn’t even get to smell it, let alone taste it. We always eat our pancakes with maple syrup, but of course you can eat it with whatever you wish, golden syrup, honey or even bananas and yogurt, its your call.
Just make sure you have a really good non-stick pan.

- 1 1/2 cup flour
- 1 1/2 teaspoon baking powder
- pinch of salt
- 1/4 cup sugar
- 3 tablespoon melted butter
- 2 eggs
- dash of vanilla extract
- 1 cup milk
- Mix all the dry ingredients together. Make a well in the center and add the butter, eggs and vanilla extract. Mix whilst pouring in milk little by little, till you get a smooth batter, (may need to add a bit more milk).
