Fluffy, airy and just the right size, plus bringing sprinkles to a whole new level is this funfetti mini cupcake!
Can you see the red and green sprinkles proudly displaying their vibrancy in the cupcake? This is what this miniature cupcake is all about. Sprinkles, sprinkles and more sprinkles and oh not forgetting fun! These are really great for parties.
Now to explain the process, it is a very basic and typical process. The only difference is of course adding the sprinkles into the batter. I must warn you DO NOT OVER MIX, if you do your cupcakes will look like tie-dye cupcakes. Sprinkles (as far as I know) come in two forms, the nonpareil sprinkles (the little balls) and the cylinder sprinkles (the tiny tube looking ones). If you use the tiny balls then you must be extra careful because the colour will start bleeding into the batter more faster than the tiny tube ones.

Around 24 MINI cupcakes will be made, depending on how much batter you pour into each case. Be sure to not overfill, only 3/4 of the case should be filled, overfilling will result in a mushroom looking cupcake, trust me I know…
- 1 2/3 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (115g) butter, softened
- 1 cup sugar
- 1 egg
- 3/4 cup buttermilk or 3/4 milk + 2 tsp vinegar
- 2 tsp vanilla essence
- 1/2 cup sprinkles
- Mix the dry ingredients together. If you do not have buttermilk, then mix the milk and vinegar and leave for 5 minutes. In the meantime cream the butter and sugar, add the egg and vanilla essence.
- Now add all the dry ingredients into the butter mixture, pour the milk in and mix with a spoon. Add the sprinkles once the batter is properly mixed. Remember not to over mix when adding the sprinkles. Pour into prepared cupcake cases and bake in a 180 degree preheated oven.
