These are not your normal thin pancakes, these are thicker, softer, lighter and much more airy. It is a bit tricky when you are actually cooking them as they stick to the pan, so cook on really low heat at the beginning till you get the hand of it. I actually have a confession to make this recipe is my sister’s.

Actually I had no choice, my husband prefers these pancakes over mine!
He loves the spongy texture…when I make my pancakes I get a looong face and when I make these ones I receive a broad grin.
So here is the broad grin pancakes!
- 1 1/2 cups milk
- 1/4 cup white vinegar
- 2 cups all purpose flour
- 1/4 cup white sugar
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- 1/4 cup butter, melted
- Combine milk with vinegar, allow it to stand for 5 minutes. Mix the flour, sugar, baking powder, baking soda and salt in a mixing bowl.
- Whisk eggs and butter into the soured milk. Make a well in the middle of the flour mixture and add the soured milk. Heat a non-stick pan and make pancakes.
- Do not put the milk and vinegar in a metal bowl as it might react with it.
- Be very careful with the milk and vinegar mixture, if it is left for more then 5 minutes the end result will be tangy tasting pancakes.
