My sister just had a baby boy in May, to celebrate we threw a party… And I was in charge of these cute looking cupcakes!
In Islam we have what is called the ‘Aqeeqah’, it is a bit like a baby shower except we do it after the baby is born and we have the slaughtering of the sacrificial animal, one if it is girl and two if it is a boy. The sacrifice is done in the name of Allaah (God) as a thanks from us for the blessing He gave us.
I made the cupcake mixture, half choc-chipped and half vanilla topped with butter icing. My mum and I, with the help of friends, baked and iced 400 cupcakes. Do not ask how long it took! Just know we slept after 1:30 in the morning.
But it was worth it! Seeing my cupcake stand (which by the way I made myself) filled with blue and white cupcakes.
The recipe is super simple, easy to follow, and delicious every bite, especially the choc-chipped one.
- 3 cups Edmonds muffin mix
- 3 eggs
- 3/4 cup cold milk
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- Chocolate chips (optional)
- Mix all the ingredients together.
- Pour into muffin cases and bake in a preheated oven at 180 degrees til cooked.
