Casserole comes from the french word casse, meaning a case, a large deep dish used in the oven and as a serving vessel. You don’t necessarily need a casserole dish to bake this, a deep baking tray can also be used. To bring out the flavour I seasoned the flour with herbs and spices, then coated the chicken in the seasoned flour. The easiest way to do this is to pop the chicken and the flour in a zip lock bag and give it a good shake. This is the chicken all ready to get baked ⇓
And this is the cooked version ⇓⇓I used a size 20 chicken (cut into curry pieces), chicken breast can also be used but I think chicken pieces with the bone will do this recipe more justice. If you’d like your casserole to have a bit of gravy then whilst its baking in the oven be sure to keep checking to make sure the gravy hasn’t dried up, if it has, add 2-3 cups of boiled water. Going through the many casserole recipes online I noticed a numerable amount added red wine or some other wine, to substitute this I simply added water. If you wish, chicken stock can also be used, but I prefer to not use too much of ingredients that can be harmful to health, there is no chicken stock on the market that does not include MSG (mono-sodium glutamate) in it.
- 1 onion chopped
- 5 cloves garlic crushed
- size 20 chicken
- 1/2 cup flour
- 1/2 tbsp oregano
- 1/2 tbsp tarragon
- 1 tbsp dried parsley
- black pepper
- 1 cup diced tin tomatoes
- 20 average sized mushrooms roughly sliced
- Mix the flour, oregano, tarragon, parsley, black pepper and salt. Add this to the chicken, making sure chicken is properly coated. Heat oil (about 5 tbsp) in a pot. Once heated add the onion and garlic cloves, allow the onions to slightly brown and then add the marinated chicken. Brown the chicken, should take about 15-20min. Add the tomatoes, mushrooms and to begin with add 3 cups of water.
- Remove from heat, transfer to a casserole dish and bake in a preheated oven of 180 degrees. Check every 1/2 an hour or so to make sure there is enough gravy to prevent burning. If gravy looks less add another 3-4 cups of water. Once chicken is full cooked serve with desired sides.
